Simple food

I am feeling a lot better right now, about my eating, about my job, about life in general!¬† This is helped by the fact that I get to blow this popstand in less than 2 hours ūüôā

For a morning breakfast/snack mix, I had a thin hamburger bun.  O f course this could have been helped with some jam or peanut butter or a slice of cheese, but honestly the bun itself was enough!

For lunch, I had the “lazy lady” specialty of taking leftover pasta salad and dumping it on a bed of spinach.¬† Dump any leftovers on a bed of spinach and I will eat it.¬† Frugal AND fit!

For an afternoon snack, I had an all-bran bar.  I will probably stop at the grocery store on my way out and buy an apple.  There was a scene in Big Brother last night that showed off a bowl of apples on the kitchen table and ever since I have been craving one.  Reality television is not only affecting my spare time, but also my appetite!!!

If you can spare them, please send any good luck to me this afternoon as I have my glucose tolerance test.  I hope I am very tolerant to glucose, whatever that may mean!

Freezer Clean-out

We are hosting a barbecue on Saturday and we are expecting quite a few people. ¬†I didn’t realize we had that many friends! ¬†Because of this, we need to stock up on burgers and we have just one tiny freezer. ¬†Thus, we are trying to eat up the contents of our freezer before the weekend. ¬†6 month old falafel balls, anyone? ¬†So Husband had a pizza to free up some space and he made me some perogies for dinner. ¬†I asked for 6, he fried up 12! ¬†He was determined to finish up the package. ¬†I would like to tell you that I only ate six, but I cannot lie to my friends.

I ate all 12 and lived to tell about it.

At least I didn’t have any sour cream with it. ¬†Frugal? ¬†Fit? ¬†No?

Because of this delectable, cheesy carbfest, I kept it light for dessert and only had one low-fat brownie.  Hello self-discipline!

I also had a cup of coffee to drink while watching Big Brother!

This will keep me up until 1 am. ¬†That would be perfect if I could watch Jersey Shore but we don’t get it until Saturday!!! ¬†Wahhhh!!! ¬†<– I sound like Snooki.

I don’t know if you know this, but tomorrow is Friday. ¬†Hurrah!

Blame the iPhone

So I posted my breakfast entry while waiting for the bus using my iPhone, but it seems to have posted as if I wrote it yesterday.  I am not sure what happened, unless I made like Marty McFly and went Back to the Future?  Perhaps.  In any event, I posted a blog from the bus (while waiting and while riding).  It was multi-tasking at its finest!

For a snack this morning, I had some baby carrots…

I also had a medium chai latte and a granola bar.  I was hungry I guess?  That chai latte was pretty flipping amazing.  Worth every penny of my $4.10!

For lunch I had a salad.

It was exactly like the salad I ate on Monday night because that is when I made it!¬† For being a couple of days old, it wasn’t too bad at all.¬† I am going to call it a success.

I have a dentist appointment at 3:15 pm which is never fun.¬† I just had one 3 months ago, but they advised I go every 3 months since I am pregnant and need to be more concerned about gum disease or something.¬† I think it’s a scam!¬† I don’t know why I agreed to it.¬† Oh well, an hour out of work to lie down and watch TV.¬† We just won’t emphasize the part about having my teeth scraped to oblivion.

As I expected, I didn’t have it in me to make much of a dinner. ¬†When I got home, the kitchen sink was full of dirty dishes and I almost burst out crying. ¬†These pregnancy hormones are killer! ¬†I love pregnancy, but this emotional roller coaster has overstayed its welcome.

In any event, I managed to stifle my tears long enough to scramble some eggs with veggies and serve them with a toasted Wheat thin. ¬†This was the first time I really got a taste of the Wheat thin (without it being overpowered by peanut butter) and they are awfully sweet! ¬†I mean, they are tasty, but bread isn’t supposed to be that sweet I don’t think…Hmmm…

Served on a side plate to give the illusion of more food!

And then I just WENT FOR IT and ate an entire half a cantaloupe.  Did you know that cantaloupe is infinitely tastier if you sprinkle it with a bit of salt?  I speak only the truth.

And then I WENT FOR IT again and ate two low-fat brownies.

Tomorrow I will try to actually cook a meal for dinner.

I think I alluded to this before, but once work or life becomes more stressful, the desire to spend money becomes greater and greater. ¬†Well, maybe the desire to spend money doesn’t increase, but the desire to be conservative with money definitely decreases! ¬†I find myself not caring as much about sticking to my budget and watching my pennies, since I have greater concerns to think about now. ¬†It’s a tough deal! ¬†You make more money, you spend more money, and so the cycle goes…

I think I need to dust off my copy of Your Money or Your Life!

Well I am just proud of myself for making it through another day AND having posted all three times. ¬†Now if only I could find the energy to read some of my favourite food blogs out there…

I am so creative with my subject heading!  This is what happens when you write a post at 3:46 pm.  Every ounce of creativity has been drained out of me!

For a morning snack, I had baby carrots.  You know how I feel about baby carrots!

I really lucked out with lunch, because Mike ordered green curry yesterday and hated it which meant that he gave it to Hubby to give to me which I had for my lunch today.¬† One person’s loss is another’s gain because it was delicious!¬† Green curry is one of my favourites.

There are some vegetables hidden under all that white rice.  I swear!

For dessert, a brownie I made a week or so ago that I defrosted last night!

For an afternoon snack, I had a peach around 1:30 pm and then a ROLL! bar along with a cup of decaf green tea around 3:00 pm.¬† I am still sipping the lukewarm tea now…perhaps wishing it was coffee?¬† Perhaps.

Hubby is also getting home late tonight, so I think dinner is going to be something easy, like scrambled eggs and toast.¬† I just don’t have it in me to make anything more elaborate than that.¬† I can see why take-out and fast food is so popular!¬† I am trying to avoid those temptations, but it can be tough after 11 hours away from home.¬† However, my salavation tonight is Big Brother!¬† Woohoo!

A Vegetarian at Rib Fest: A Hungry Tale

I am so sad. ¬†It is Monday night after a long weekend, which means that work is all too imminent. ¬†I am trying to remain positive and bribe myself with promises of coffee and larabars tomorrow, but still. ¬†Starting a new job is never fun! ¬†Starting a new job when you are still doing your old job is also not fun. ¬†I’m not sure I will be able to write tomorrow morning, but I will try!

As God as my witness, I will try.

But today has been a fun day, even though it meant surrounding myself with abundant amounts of barbecued meat. ¬†The things we do for love! ¬†Really, the things we do to get out of the house for a couple of hours ūüėČ

Before we left, I filled myself with a sliced mango, some cottage cheese, and a slice of zucchini loaf. ¬†I didn’t want to take any chances and rely on a ribfest to feed me lunch.

I’ve attended one ribfest before and this one was exactly like the previous. ¬†A packed park filled with a greater number of tattooed women than you will find in regular society, waiting in long lines to buy expensive meat!

A pulled pork sandwich, a quarter chicken, and a 1/2 rack of ribs…for one person.

Mike ordered something called a “vegetarian’s nightmare” and this is how they labeled the container:

I don’t know who Jacki is, but his meal was definitely not “veggie”

I wasn’t sure what to get since my vegetarian choices were funnel cake, a bloomin’ onion, or french fries. ¬†Luckily husband spotted a sign for a roasted yam! ¬†I knew this would be my salvation.

$4! ¬†I could have made this at home for 75 cents ūüėČ

But it was delicious with a tad of butter and brown sugar.  I was content.

I became even more content once I got an iced cappuccino!

And we shared some of these amazing donuts.  Have you heard of Tiny Tom?

These are freshly fried tiny donuts that are sprinkled in your choice of sugar or cinnamon.  They are served warm, fresh, and absolutely delicious!

I am not sure how many of these I ate.  I can verify that it was a lot.

Because of my sugar and carb rush, I kept things light for dinner and had a monster salad.

You will see this salad tomorrow and Wednesday because I made four at once (one for hubby).  It contains:

  • Spinach
  • Broccoli
  • Mushrooms
  • Tomato
  • Red pepper
  • Avocado
  • Zucchini
  • Chickpeas
  • Cubed cheddar
  • Raisins
  • Walnuts
  • Mediterranean dressing

Now I am trying to keep myself occupied and entertained until bedtime.  We will probably watch more Dexter and go to bed at a decent time while dreaming of winning the lottery (although this fantasy would be helped if I actually bought a ticket!).

See you tomorrow!

Another Fabulous Monday

You won’t hear me saying “another fabulous Monday” too often but when it involves sleeping in, a day off work, and Breakfast Quinoa you most certainly will!

But first, check out this thumb claw:

Don’t mess with Texas. ¬†By Texas, I mean Dr. Snuggles

Yesterday was an accomplished day. ¬†I walked 10 km! ¬†I have told this to pretty much every person I have spoken with since then. ¬†I am proud of myself. ¬†I have this wacky theory that as long as I keep myself in relatively good shape, the birthing process should be easy and the little guy will be out of there in, like, four hours. ¬†That’s how it works right? ¬†You get to imagine the kind of birth you want and it just happens?

We walked down to the beach and it was gorgeous out! ¬†I have never seen a Canadian beach filled with so many people before. ¬†This is partly because I very rarely visit Canadian beaches, or when I do, it’s at 8 am in the morning.

Pasty, sun-deprived Canadians

Like these two hotties!

We walked and walked, taking a couple of breaks to eat baby carrots (don’t leave home without them!). ¬†Husband got a craving for a falafel and the beauty of living in Toronto is that a mere five minutes later we came upon a falafel shop. ¬†Now that’s what I’m talking about!

We each ordered a falafel sandwich and shared a bottle of water.

Not bad for $3.50

We continued on our merry way and stopped for another break at Starbucks. ¬†I wanted an iced decaf coffee but they didn’t have any so they gave me an iced decaf Americano for the cheaper price. ¬†Score!

I added cream because that is what I do.

We eventually made our way home and chilled in the basement (literally). ¬†I snacked on some zucchini bread and then made us Green Monsters. ¬†You will notice the rest of the day’s pictures aren’t taken in natural light because I spent the remainder of my time hibernating in the cozy, cool basement.

I made this GM with the usual milk/frozen banana/frozen peach/spinach combo, but my spinach was starting to turn which gave this a very spinach-y flavour.  Ummm, not such a good thing.  But I still drank it!  Waste not, want not.

Because of my determination to spend the rest of the day on my rump, cooking a large meal for dinner wasn’t on the agenda. ¬†We just ended up having grilled cheese and tomato sandwiches.

Grilled cheese sandwiches are severely underrated

I thought this would conclude my day’s eating, but I heard the siren’s call and I could not resist…

Thankfully (or tragically?), the carton is almost empty and this temptation will no longer reside so close to my, um, taste buds. ¬†That is, until a buy another carton…:)

I stayed up WAY too late last night (as did the little man who was kicking away until 2 am!) and woke up around 8:30 am.  I made some Breakfast Quinoa because I am addicted to this stuff!

My plans today involve going to “ribfest” with two carnivores. ¬†A vegetarian nightmare? ¬†Perhaps. ¬†I just am hoping for corn on the cob and lots of it!

Before I forget, here is the Monday Rundown (a synopsis of my miscellaneous spending for the previous week):

Dinner out $20

Change for subway $1

Gum and Christmas cards! $5.4

Coffee $1.89

Coworker gift contribution $20

Coffee $1.89

Gluten-free snack for coworker $4.75

Falafels and water $9.3

Total for week $64.23

Yes, I bought ¬†Christmas cards in July! ¬†They were on sale for $3 so how could I resist? ¬†Like usual, I mostly spent money on food, but I also contributed to my coworker’s departing gift as well as a gluten-free snack for her party (my work’s social policy has changed so they no longer pay for parties!). ¬†She is the one who hired me at my job five years ago and has made my life infinitely easier because of her calm, kind demeanor. ¬†I figured she was worth approximately $24.75.

Now it is time for me to go do nothing.  Happy Monday!
