It humours me to no end that the number one phrase people type into search engines that ultimately leads them to this blog is “couch potato”. I didn’t realize I used that phrase so often! Or maybe it’s just the overall feel that people get when reading this blog? Hmmm…
Today I don’t feel like a couch potato at all! I feel worn out! I feel a lot better – my cold is finally abating – but there seems to be so many small chores to do around the house during the precious few hours that Henry sleeps. I had hoped to bake some zucchini bread today but my dirty floors and unwrapped Christmas gifts must take precedent. Oh, yes, and writing in here, of course. Of course!
Last night I was able to cobble together a simple, delicious soup. It was healthy and frugal and now I am going to share the recipe here. Finally, a blog entry that is actually thematic with the blog!
Barley Bean Soup with a TexMex Kick!
1 tablespoon olive oil
5 cloves of garlic, minced
1 jar of salsa
1/2 cup pearl barley
2 cans of beans — I used one can of kidney and one can of black
1 1/2 cups of frozen corn
1. In a soup pot, heat the olive oil over medium-low heat and cook garlic for 1 minute until golden.
2. Add salsa and stir to combine. Add four cups of water and barley, and bring to a boil.
3. Add beans and corn, reduce heat, and simmer for 30 minutes. Voila!
I left this on a hot element and by the time I came back for seconds, much of the liquid had been absorbed and it was less like a soup and more like a stew
This isn’t the best soup I have ever made, but it’s delicious enough to make again, especially on a cold winter night in which you have little-to-no energy to cook. While it’s simmering you can put on your expandable pants, examine the TV Guide, and spend the rest of the night as a…you guessed it…couch potato!
