Frugal Brunch. Frunch?

Happy Sunday!  And happy August!

It’s another beautiful day here in Toronto.  My goal today is to actually leave my property line (didn’t happen yesterday).  I guess I already accomplished this goal by grocery shopping first thing this morning.  I was able to buy a week’s worth of groceries for $85, $15 less than usual.  Hurrah!   Me and husband are thinking of heading down to the beach today.  We don’t actually go swimming at the beach, just walk along the boardwalk, check out the shops, and buy some sort of baked good.  Not a bad way to spend a Sunday.

Before grocery shopping, I had a small bowl of plain yogurt, blueberries, and walnuts.

After grocery shopping, I made some French toast.  I used old bread ends that have been sitting in my freezer for Lord knows how long.  Some were a bit freezer burnt, but that didn’t stop me!  I simply zapped them in the microwave for a minute and they were as good as new.  Or almost as good as new.  I used to just throw bread ends into the compost, but now I try to freeze them and use them up in bread pudding and French toast.  Just call me Frugal Fanny!  Wait…don’t.

I scrambled two eggs with a bit of milk, vanilla extract, and cinnamon.  I dipped three slices of the bread into the mixture and then fried them in my skillet.  I topped them with a sliced peach and some real maple syrup.  I have some leftover mix now that I will just add to in order to make husband’s breakfast once he wakes up.  Easy peasy!

This was delicious but so, so, so sweet!  I have my glucose tolerance test next week and I am starting to worry about it.  I think I eat well most of the time, but have I mentioned the container of chocolate chip cookie dough ice cream in my freezer?  Oy.  I’d like to say I will cut down on the sweets, but honestly that little bowl of heaven after a long day at work is what gets me through.  Let’s just hope and pray I pass the test!

And now it is time for me to drink coffee, i.e., the best time of the day.

    Breakfast looks good! I always freeze odds and ends of bread rather than throw them out as I figure they can always be used for something!

    I always freeze the ends of bread, too, and usually use them for breadcrumbs or croutons. Too bad I’m not so frugal with the rest of my spending.

    By the way…I am trying to cut back on spending so I am thinking of doing a “frugal” challenge on my blog in September (similar to last month’s vegan challenge). Any tips for me or aspects I should definitely include?

      Ooh, I look forward to that blog challenge! I guess the one tip I would give is to track everything you spend money on. This can be tedious, but really enlightening. I also find it helps to stick to a set budget each week for fun/miscellaneous spending too. Sometimes it’s worked out in that I end up splurging on an item because I have lots in my “reservoirs”. If I didn’t keep such meticulous track of my spending, I might have not given in…

      Also, if you have any tips about how to maintain an active social life while on a budget, I’m all ears!

    things that make your sugar rise are carbs and fatty foods, as well as fruits and natural sugars. so try and keep away from these things…
