Carrots + Salad: The Continuing Saga
I am not very creative with my snack and lunchtime choices. My defense is that I work full-time and would rather think of creative dinners than figure out creative lunches. So, you must endure yet another picture of baby carrots and a salad. Sorry!
This salad was really good:
- Baby spinach
- 1/2 sliced tomatoes (mingling blueberries with tomatoes is probably a culinary no-no, but it’s a Robyn yes-yes)
- Red pepper
- 1/2 sliced avocado
- Feta cheese
- Balsamic Vinaigrette
Finished with two squares of toffee dark chocolate!
