Coconut Butter

TGIAF!

Breakfast this morning was quick and easy Vegan Overnight Oats.  Last night, I mixed 1/2 cup rolled oats, 1/2 cup almond milk, and 1 Tbsp of chia seeds in a bowl and let it sit in the fridge over night.  This morning, I topped it with 1/2 a sliced banana, a handful of blueberries, a small handful of Kashi Go Lean for “crunch”, a small spoonful of peanut butter, and a small spoonful of coconut butter.  Of course, the “butters” MADE this meal.  Just leave me alone with a jar of coconut butter and shut the door on your way out, ok? 😉

I’m not sure if Kashi Go Lean is vegan, but I am hoping it is, because I always feel a sense of righteousness when I eat a vegan meal.  Alicia Silverstone would be proud.

Yesterday, while I was on the phone at work, a coworker handed me a MAC lipstick and eyeshadow.  I never had the chance to properly thank her, but I am thinking they were “free gifts with purchase”.  She is a very generous coworker, but still, a very random gift!  I tried the MAC lipstick this morning and I have to say I know why people are such MAC-lovers.  Everything from the texture of the lipstick gliding on to the weight of the actual tube is so much more luxurious than my cheapo Cover Girl or Maybelline.    The bonus to this is that the colour is perfect.  When does that EVER happen?  I like to think that the frugal gods are looking down on me, helping me out, one free lipstick at a time.

Or something.

Is it time to go home yet?

    MAC never does “free gift with purchase”. What color is the eyeshadow? This is the kind of stuff I like to read about on your blog. Screw healthy eating. 😉

      They don’t? Hmmm. The eyeshadow is a light brown/beige. I think I will get a lot of use out of it! Honestly, I mentioned the MAC mostly because I knew you’d be impressed 🙂

        You mentioned it because you knew I’d comment! The bottom of the container will tell you the name. There are about 25 different brown/beiges and now I must need to know exactly which one it is. Your homework is to find out this information.

    Have you ever made your own coconut butter? SUPER easy! Just put unsulphured,unsweetened coconut shreds in a food processor and let it run for about 5 minutes (depending on your machine it could take longer or shorter.)
    Super easy and frugal! 🙂

      I think you are my new favourite person. That is a great tip! I think this jar will last me for a while (I hope!), but once it’s finished, I will be utilizing this info for sure. Thanks!

    I have tried to find coconut butter in the UK but haven’t had any luck. I have seen it all over the blogs and really want to try it because I adore coconut! so nice of your co-worker to give you the make-up – how sweet!

    I ADORE coconut butter! I use it a wee bit too much which is good that I don’t have any left. However, I do plan to attempt to make my own coconut butter. I’ve heard mixed reviews on how successful people have been. It seems to depend on food processor and blender. But hell, coconut flakes are not overly expensive (you can get it in bulk, right?). Hmmm…

      Definitely worth the experiment. I wonder how long my current jar will last me? It’s so large, that I would think many months, but you just never know….I mean, we are talking about coconut butter here…:)
