Intense Mint

I had to step outside for 10 minutes earlier today.  I am not quite sure I have ever felt a summer day as hot as this one.  Global warming is alive and well!

But onto happier subjects, shall we?  Such as what I have been eating (the happiest subject there is!).

For a morning snack, I had some fresh, diced pineapple.  This was tasty, but left me feeling more hungry than before I ate it!  Why do some foods do that?  Fruit and vegetables are particular culprits.  Soon after eating this, I was forced to step outside which quickly changed my thought process from the hunger in my belly to the pain of my very being.

I think my salad today was looking particularly delicious.  Hummus has been a welcome addition to the pantheon of salads this week!

  • Baby spinach
  • Broccoli
  • Mushrooms
  • Blueberries
  • Cucumber
  • 1/2 sliced avocado
  • Hummus
  • Feta cheese
  • Pumpkin seeds
  • Balsamic Vinaigrette

For dessert, I broke out a new chocolate bar because the Sea Salt Dark Chocolate is all gone.  I shed a single tear.

I thought the mint would be nice since I eat this immediately after my garlic-filled hummus-infused salad.  I was right!  Lindt makes such a great dark chocolate bar.  They don’t pay me to say that, but they probably should.

Now I am debating whether I should step outside again for a bit of fresh air.  The air is more steamy and stale than fresh, though.  I am probably better off staying in my windowless office!

    I have to tell you I’m really enjoying seeing all your salads! Ever since the heat wave started we’ve been consuming lots and lots of salad (it helps that we get at least one humongous head of lettuce each week with our CSA) and you have been giving me ideas!

    Global warming is definitely alive and well!

      I am glad you like the salads! I feel like they get repetitive after a while, even though I try to spruce them up with such exciting things as pumpkin seeds. Since I have salads for lunch, I am still cooking hot meals for dinner. I am a fool! Alas, a fool with air conditioning 😉

    I love my hummus on salads now! I had some yesterday AND today! I’m such a rebel!

    I’ll break out and have a square of sea salt Lindt for you in a few minutes, I have two squares left. Have you tried the chili yet?! I’m both frightened and intrigued by it…

      I have tried the chili Lindt chocolate. If you like spice, you will love it. Now I am inspired for my next chocolate bar selection 🙂
