The hummus, avocado, feta trifecta

Just so you know and aren’t wondering — it is still really hot outside! I had to run across the street to buy salad dressing, and I almost melted in the process. True story.
For a snack this morning, I had my usual baby carrots. This is a new trend, as you may have noticed. It’s such a nice, light snack. I don’t usually put carrots in my salad because they require just that extra bit of preparation that I am not willing to perform, so I love having baby carrots around.
Baby carrots: For the lazy carrot lover
I had a salad for lunch and, as expected, my tub of spinach is now all gone. Luckily, husband picked up a huge 1 pounder yesterday so I am good for spinach-consuming for the rest of the week. Phew.
- Baby spinach
- Broccoli
- Orange pepper
- Mushrooms
- 1/2 avocado
- 2 sliced dates
- Scoop of hummus
- Feta cheese
- Sunflower seeds
I loved this salad! There is something magical that happens when hummus, feta, and avocado are combined. Add some sweet dates into the mix and it’s almost overwhelming. Hehe.
Of course, I had two squares of sea salt dark chocolate for dessert. I missed it over the weekend! Maybe I should keep a bar at home and a bar at work.
Or a bar at home, a bar at work, and a bar in my backpack. Hmmmm.

It is made by “Lindt”. You can find it anywhere! I got mine at Loblaw’s but I’ve seen it at Shoppers Drugmart too. It is delicious (to put it mildly!).
