I am so exhausted. After I write this entry, I am going to make my lunch for tomorrow and hit the hay!
For brunch (this was after noon), I made blueberry oatmeal pancakes. I just used a basic pancake recipe and added a handful of rolled oats and a handful of blueberries. I topped it with 0% Greek yogurt and some sliced banana and strawberry, as well as a drizzle of maple syrup. Very good and very filling! Greek yogurt is key for staying power.
I think I had about 5 pancakes. Along with a cup of coffee and expandable pants, it was a relaxing way to spend the post-craziness.
I didn’t get hungry until 4:30 pm. It always impresses me when I don’t need a snack! For dinner, I made a green monster. Addicted much?
- 3/4 cup of soy milk
- 1/2 cup of frozen raspberries
- 1/2 banana
- 1 giant handful of baby spinach
I approve of the resulting colour.
I had yet another bun-less veggie burger for supper. This time, topped with grilled pineapple and barbecue sauce. My new favourite combination! I also had my first cobs of corn of the season. They were amazing, topped with margarine, salt and pepper.
I had a nap for a couple of hours which helped a tiny bit. I still can’t find the stamina to bathe, though! That will have to wait until tomorrow morning. I had a small blueberry scone and some diced fresh pineapple for dessert.

I am feeling very blah, exhausted, and my hand hurts. A part of me would like to call out tomorrow from work, but the other part of me doesn’t like to do that. I think I am going to have half a bagel with natural pb for a bit more comfort!
