Workin’ it

Thank God for my snacks because they were very much needed this afternoon!  I had my cherries:

around 2:30 pm this afternoon.  I only ended up working an hour later (I’m usually done at 4, but finished up around 5:30 pm) and thought I would last until I got home for dinner, but nope!  I had a SNACK ATTACK while waiting for the bus (maybe it was the boredom too?  Waiting for the bus is the pits).  Thankfully, my Pro Bar was easily accessible.

These tiny, little bars pack in a mean nutritional punch.  One of them is almost 400 calories alone!  I ended up eating about 1/3rd so as not to spoil my dinner.  This is what was left (which I’ll eat tomorrow):

They are vegan and very tasty.  I would definitely buy one again.

By the time I got home, I wanted a quick, filling, and incredibly healthy dinner.  After destroying that ENTIRE pizza last night, my body was craving something well-balanced, simple, and colourful.  I came up with a perfect concoction:

This meal contains:

  • 1 baked sweet potato topped with 0% plain yogurt (not Greek! 😦 ) and cinnamon
  • 1 cup of cherries
  • 1 can of lentil soup

I always used to think that baked potatoes actually needed to be, uh, baked in the oven which takes upwards of 45 minutes.  Then I read Caitlin’s awesome blog and learned that you can zap one of these puppies in the microwave for 5.5 minutes!  It worked like a charm.  This is my new favourite quick and easy meal.  It was ready and on the table in 10 minutes.

I really like this type of lentil soup…

It’s very flavourful, has only a few ingredients, and has a great nutritional profile:

I eat the whole can which works out to be just over 2 servings.  20 grams of protein, 10 grams of fibre, 320 calories, 4 grams of fat, and a whole lotta deliciousness!!!! <– lame.

So I am absolutely stuffed and done eating for the day.  So for dessert, I am trading in the sweetness of cookies or cake for the sweetness of Snuggies!  Oh yeah, baby.  Time for a photo shoot!

    Aw your kitty is so sweet. My sweet gray camera-mugging kitty died this spring, so seeing yours is cheering me up.

    I love love love sweet potatoes and I know you CAN do them in the microwave but honestly I think baked tastes a gazillion times better. I do oven baked or just eat something else if I don’t have the time.

      I’m sorry to hear about your kitty, but glad that pictures of my kitty cheered you up a bit. I never used to be a fan of grey kitties until I met her!

    Your labels don’t provide the total amount of servings per package? That may be hard for me. *Shrugs*

    At first I thought your photo showed a sweet potato with a mug of hot chocolate! I was so excited. Lentil soup is not bad, I suppose.

    I also prefer my potatoes baked. And people like to lecture me on microwaving my food. They tell me to google it. *Shrugs*

    My family does the 1/2 microwave and 1/2 baked thing. I am not sure how many minutes each. I usually make oven fries or roast things. Although, the microwave sounds much more summer (weather) friendly!

    I came back to make it clear that I still do use our microwave! But if anyone wants to try to talk me out of it (without telling me to google it) I would be glad to hear about it! (I am not quite sure why I went on this tangent on your blog….:-( )

      Haha, you are so cute Janet 🙂

      I have heard a lot against the microwave. I don’t use it too often and I would never microwave anything containing plastic (it creeps me out when I see coworker’s microwave things in tupperware) but I think that using it every so often isn’t too bad. There are so many things to worry about, eh? I think the stress from worry is more lethal than anything else!

    I don’t think I’ve ever seen that soup before! Will definitely check it out ’cause it sounds awesome!

    I use the microwave trick in a pinch. I try not to use the micro that often (I always envision my food coming out with a green glow around it) but it’s SO handy to have available when you’re in a rush! LOVE it! I also love sweet potatoes with melted coconut butter on it! YUM!

      If you like lentils, then you will like this soup! And it’s one of the less expensive kinds too, which helps 🙂

      Yeah, I try not to use the microwave much either and, if it weren’t for my husband, I would keep mine stored in the basement (we have such limited kitchen counter space as it is), but I do find it so handy every so often. I was quite impressed with last night’s potato, let me tell you 🙂
