Toss up

The day or two before a weekly grocery shopping trip is always fraught with too little of the good stuff (fresh fruit, Greek yogurt etc.) and too much of the stuff you are sick of eating throughout the week (leftovers!).  The key is to create new, exciting combinations.  Maybe “exciting” is a bit of a stretch 😉

I wasn’t hungry for a snack, even though I have those immaculate cherries sitting in the cupboard above my desk!  They will have to wait until later this afternoon.

Today’s lunch consisted of two different types of leftovers on a bed of baby spinach.  Leftovers are always best served on a bed of baby spinach!

This concoction consists of both the California Summer Salad and leftover taco-flavoured veggie ground round (that’s a mouthful — literally!).  I just plopped them both into some tupperware and hoped for the best.

I figured the flavours from these two dishes would complement each other.  They have both have a tex-mex vibe (the salad has cilantro and lime juice; the ground round has taco seasoning; and they both have black beans!).  I was right.  It was delicious!  *Pats self on back*

For dessert, I had three squares of the last of my Dove chocolate.  This was definitely one of my favourite dark chocolate experiences.  The next bar in the line-up is 80% Cocoa rather than 70%.  I hope it’s not too bitter!

I have to work late tonight so I’ve equipped myself with some sustenance:  the aforementioned cherries, a blueberry scone, and a Pro-bar!  If there is one thing I have learned in my working life, it is to always keep snacks at your desk.  That is, if you don’t want to develop a special one-to-one relationship with the vending machine.

    That lunch looks delicious! I don’t know if it would keep me full though 🙂

      I pack lunches that keep me full for about 2-3 hours and then I need a snack! Thankfully, I have a bunch of cherries in my possession 🙂

    I hate the day(s) before a grocery shopping trip. The fruit is all gone, you’re out of all the GOOD stuff. Sigh.

      It sucks, eh? Luckily I am not opposed to buying fruit mid-week, because this fruit needs her fruit! 😉
